Muffuletta

Oh, hello Friday.  When did you get here? I assume you’re just doing your job and dutifully following Thursday. I’m just surprised this week has gone by so fast! Since you’re here let’s talk about vinegar. I know, I know. I talk about vinegar a lot. If I’m not soaking chicken breast in white wine vinegar, then I’m dousing green beans in red vinegar. But this may be the mecca of vinegar recipes.

 

Pickled vegetables and olives are chopped then stirred together with MORE vinegar. Yep vinegar, vinegar and… vinegar. It’s a trifecta. And also a pretty tasty sandwich.
 

 

Muffuletta

1 cup giardiniera
1 Tbsp green olives
1 garlic clove
1 Tbsp red wine vinegar
1 Tbsp olive oil
½ lb sliced turkey or chicken lunch meat
2 thick slices salami
2 slices provolone cheese
2 Kaiser rolls

Chop giardiniera and olives, and mince garlic. Combine in a small bowl and add vinegar and olive oil. Cover and chill overnight.

Top the bottom half of each roll with one slice of salami, one slice of cheese and half the meet and giardiniera mix.

Notes: This recipe is very adaptable. Feel free to swap pepperoni for the salami and any white cheese for the provolone.
